Garlic Confit Recipe – 2 Easy Ways
About this recipe
Garlic confit is a delicious way to transform garlic into a tender, flavorful spread that can elevate any dish. In this video, The Cooking Foodie shows you two easy methods to make garlic confit: stovetop and oven roasted. Both methods yield rich, aromatic garlic that can be used in various recipes or enjoyed on its own.
Whether you prefer the gentle simmer of the stovetop or the slow roast in the oven, you'll find that making garlic confit at home is straightforward and rewarding.
Ingredient notes
- Use 8 heads of garlic for this recipe.
- You'll need enough olive oil to cover the garlic, approximately 500ml is a sensible guess.
- Season with salt, red chili flakes, thyme, and any other spices you like, such as oregano, rosemary, sage, or coriander seeds.
Tips from The Cooking Foodie's video
- Peeling the garlic can be made easier by shaking the cloves in a bowl for 1-2 minutes; this helps loosen the skins.
- When making stovetop confit, simmer the garlic on the lowest heat to avoid boiling, which can ruin the texture.
- For the oven method, bake the garlic at 110C (230F) for about 1½ hours until tender and light golden brown.

Steps
- 1
Peel the garlic. You can peel the garlic one by one or place garlic cloves in a large bowl/container and shake vigorously for 1-2 minutes. Some of the peel will come off, and some not, that's fine. Garlic cloves that do not peel can be peeled with your hands.

Choose your method to make garlic confit: stovetop or oven roasted.
- 3
For stovetop garlic confit: place peeled garlic cloves in a small-medium saucepan. Cover with olive oil. Simmer over lowest heat for 30-45 minutes or until tender and light golden brown. Do not boil at any stage. In the last 5 minutes of simmering, add your favorite spices. Transfer to a jar and keep in the fridge.

For oven roasted garlic confit: place peeled garlic cloves in an oven-safe dish. Cover with olive oil, add your favorite spices. Bake at 110C (230F) for about 1½ hours or until tender and light golden brown. Transfer to a jar and keep in the fridge.

Serving suggestion: spread truffle cream cheese on toasted bread, spread 3 garlic cloves and season with spices.
