Preheat the oven to 450°F (232°C) with a cast iron skillet inside.

Brush the ribeye steak with oil on both sides to help the seasoning stick.

Season the steak generously with coarse kosher salt and freshly cracked black pepper on both sides.

Remove the hot cast iron skillet from the oven and place it on the stove over medium heat.

Sear the steak in the hot skillet for 2-3 minutes on the first side until a crust forms.

Flip the steak and add the thyme and partially crushed garlic cloves to the pan.
