While the pork belly is frying, prepare the sauce by mixing together 1 cup of chicken stock, 1/4 cup of oyster sauce, 1/4 cup of hoisin sauce, 1/4 cup of dark soy sauce, 1/4 cup of honey, and 1/4 cup of shaoxing wine or sake.
