Preheat your oven to 350 degrees Fahrenheit.

In a large mixing bowl, combine the eggs, milk, sour cream, salt, and black pepper. Beat until well-blended.

Stir in the shredded mozzarella cheese until just combined.

Generously butter a 9x13 casserole dish.

Pour the egg mixture into the buttered casserole and bake for 18 to 20 minutes or until fluffy.

While the eggs are baking, cut the English muffins in half and place them cut side up on a baking sheet.

Brush the cut sides of the muffins with melted butter.

Once the eggs are done, remove them from the oven and let them cool for 10 to 15 minutes.
