    Peel and slice 3 pounds of apples (a mix of Granny Smith and Honeycrisp) into thin slices, about 1/4 to 1/8 inch thick.

    In a large bowl, combine the sliced apples with 2 tablespoons of fresh lemon juice to prevent oxidation.

    Add 1 cup (200g) of sugar, 1/2 cup (120g) of all-purpose flour, 1/4 teaspoon of nutmeg, 1.5 teaspoons of cinnamon, a dash of allspice, a dash of mace, a dash of cardamom, and a pinch of cloves to the apples. Toss to combine until evenly coated.

    Roll out one round of pie pastry to fit a 9-inch pie pan, about 1/8 inch thick. Transfer the pastry to the pie pan without pressing it down too hard.

    Fill the pie crust with the apple mixture, layering the apples for an even distribution. Dot the top with 2 tablespoons (30g) of butter, cut into small pieces.
