    Stir in tomato paste and diced tomatoes, then add all the spices and sugar. Season with salt and pepper and allow to simmer over medium heat for 10-15 minutes until it starts to reduce.

    Make 6 pockets in the tomato mixture and crack the eggs over it, one in the middle and five around the edges of the pan.
