Marinate the chicken thighs with yogurt, turmeric powder, kashmiri red chilli powder, salt, and coarsely crushed black pepper. Mix well and let it marinate for at least 30 minutes or overnight.

Chop the onion, ginger, garlic, and tomato finely.

Heat a pan on medium-high heat and add mustard oil and ghee.

Add the dried bay leaf, cinnamon stick, green cardamoms, cloves, and cumin seeds to the hot oil. Lower the heat to prevent burning.

Add the chopped ginger and garlic to the pan and stir for a minute.

Add the chopped onion with a sprinkle of salt and stir until the onions are well fried.

Add the chopped tomato and stir for about 2-3 minutes.

Add turmeric powder and stir for 2 minutes.

Add kashmiri red chilli powder and mix well.

Add the marinated chicken along with all the marinade to the pan and mix well.

Add another tablespoon of ghee and ground coriander. Stir occasionally on high heat until the water from the chicken evaporates.

Once the water has dried up, add kasoori methi and garam masala powder. Mix well.

Add 1.5 cups of hot water and optional whole green chillies. Cover and cook on low heat for 15 minutes, stirring occasionally.

After 15 minutes, remove the lid and discard the bay leaf, cinnamon stick, and cardamoms if desired.

Garnish with coriander leaves and serve with roti, naan, or rice.
