One Pan Oven Chicken & Rice
About this recipe
This One Pan Oven Chicken & Rice is the ultimate lazy man's meal, combining tender chicken thighs with flavorful basmati rice and colorful veggies—all cooked in one dish. It's simple, satisfying, and perfect for a weeknight dinner when you want something hearty without the fuss.
The key to this dish is marinating the chicken with a mix of seasonings, which not only enhances the flavor but also keeps the chicken juicy while it cooks. Plus, washing the rice beforehand ensures it turns out fluffy and not sticky.

- 1
Wash the chicken thighs in lemon juice and remove the skin to reduce oil in the rice.

Cover the chicken and let it marinate for 4 to 6 hours, or overnight if possible.
- 4
Wash the basmati rice thoroughly to remove excess starch and prevent stickiness.
- 5
In a large baking dish, add chopped onions, chopped red and green bell peppers, and the seasonings (lightly, as the chicken broth contains salt).
- 6
Add melted butter and chicken broth to the vegetable mixture and mix well.
- 7
Add the washed rice to the mixture and stir to combine.
- 8
Place the marinated chicken on top of the rice mixture.
- 9

For the last 5 minutes, switch the oven to broil to brown the chicken on top.
Heads up — we had to guess a little:
