Mexican Street Corn Recipe
About this recipe
This Mexican Street Corn recipe is a quick and delicious way to enjoy a classic dish, perfect for any gathering or just a cozy night in. Maria Antoinette from HGTV Handmade shows us how to whip it up in a skillet, making it accessible and easy to prepare.
With fresh corn, creamy mayonnaise, and a sprinkle of cotija cheese, this recipe captures the vibrant flavors of traditional Mexican street corn without the need for a grill.
Ingredient notes
- 2 oz of cotija cheese is also known as Mexican parmesan.
- Juice from 1 medium lime is about 2 tablespoons.
Tips from HGTV Home's video
- To safely cut the kernels off the corn cobs, use a large bowl with a smaller bowl upside down inside it to hold the corn securely.
- When cooking the corn, let it char on one side for 2 to 3 minutes before flipping it, rather than stirring, to achieve that perfect charred effect.

Ingredients
Steps
- 1
Cut the kernels off the corn cobs. Use a large bowl with a smaller bowl upside down inside to hold the corn securely while cutting.
- 2
Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat.
- 3
Add the corn to the skillet and let it cook for 2 to 3 minutes to achieve a charred effect on each kernel.
- 4
Flip the corn (do not stir) and let it cook for another 2 to 3 minutes until charred on the other side.
- 5
Add 2 tablespoons of mayonnaise, 1 can of mild chilies, and the finely chopped cilantro to the skillet.
- 6
Squeeze in the juice of 1 lime and add 1 teaspoon of chili powder. Mix everything together until well combined.
- 7
Sprinkle cotija cheese on top and adjust seasoning with more chili powder or cilantro if desired.
Heads up — we had to guess a little:
- The amount of cilantro is estimated based on common preferences; adjust to taste.
