Heat 1 tablespoon of oil in a pan over medium-high heat.

Add 1 small diced onion, 3 diced Anaheim green peppers, and 1 diced jalapeño to the pan. Sauté for 3 minutes.

Add 3 diced Roma tomatoes to the pan and cook for 1 minute.

Add 3 minced garlic cloves and cook for an additional 30 seconds.

Add 2 lbs of ground beef to the pan and season with 4 tsp of chili powder (or paprika), 1 tsp of black pepper, 1 tsp of ground chile ancho, 2 tsp of ground cumin, 2 tsp of oregano, and salt to taste. Break down the meat and mix well. Cook for 4 minutes.

Add 4 diced medium potatoes to the pan and mix them in. Continue cooking for another 5 minutes.

Reduce heat to medium. In a separate bowl, dissolve 2 tbsp of all-purpose flour and 4 tsp of beef bouillon in 2 cups of water (or broth). Mix until the flour is dissolved.

Pour the mixture over the meat and potatoes in the pan and mix well. Taste and adjust salt if necessary.

Cover the pan and allow to cook for 2 to 15 minutes, checking that the potatoes are soft.

Once cooked, turn off the heat and optionally add chopped cilantro before serving.
