Ingredients
Steps
- 1
Heat a large non-stick skillet over medium-high heat.
- 2
Add 227g of breakfast sausage to the skillet, breaking it up into small pieces with a wooden spoon. Cook until browned and no pink remains.
- 3
Remove the cooked sausage from the skillet and transfer to a plate lined with paper towels, leaving the drippings in the pan.
- 4
Add 2 cups of frozen hash browns to the skillet with the sausage drippings. Spread them out in an even layer and cook for about 2 minutes without stirring until golden brown on the bottom.
- 5
Stir the hash browns occasionally until they are evenly golden brown, then remove them to a plate.
- 6
Add 1 tablespoon of butter to the skillet (or wipe it down if needed) and return the pan to medium heat.
- 7
In a large bowl, crack 6 eggs and season with 1/4 teaspoon of salt, 1/4 teaspoon of cracked black pepper, and 1 tablespoon of milk or cream (optional). Mix well.
- 8
Once the butter is melted, pour the egg mixture into the skillet and cook, allowing the eggs to set for a few seconds before stirring gently until scrambled and cooked through. Remove from heat.
- 9
Wrap 4 large flour tortillas in damp paper towels and microwave for 30 seconds to soften them.
- 10
Place the tortillas side by side for assembly. Divide the sausage, hash browns, scrambled eggs, 1.5 cups of shredded cheese, 2 tablespoons of chopped cilantro, and sliced avocado among the tortillas, leaving space at the top and bottom.
- 11
Fold the sides of each tortilla over the filling, then roll tightly from the bottom to form a burrito. Transfer to a plate seam-side down.
- 12
Wipe the skillet clean and return it to medium heat. Place the burritos seam-side down in the skillet and toast for about 2 minutes until golden brown, then flip and toast the other side.
- 13
Serve the breakfast burritos warm with sour cream and salsa.
Heads up — we had to guess a little:
- The quantity of milk or cream is inferred as 1 tablespoon based on common practice for scrambling eggs.
