Heat ghee in a large pot and add sliced onions. Fry until golden brown.

Add ginger and garlic paste, and sauté for a few minutes until fragrant.

Add the chicken pieces and cook until they are browned on all sides.

Stir in the sliced tomatoes and cook until they soften.

Add coriander powder, turmeric powder, garam masala, cumin powder, chilli powder, and salt. Mix well to coat the chicken with spices.

Add yogurt and mix until well combined. Cook for a few minutes until the mixture thickens.

In a separate pot, boil water and add soaked basmati rice, cinnamon sticks, cardamom, star anise, black cardamom, cloves, ghee, lemon juice, and salt. Cook until the rice is partially cooked, then drain.

Layer the partially cooked rice over the chicken mixture in the pot. Add fried onions, chopped coriander, and mint leaves on top.
