Tiramisu
About this recipe
Tiramisu is a classic Italian dessert that combines the rich flavors of coffee and mascarpone cheese with the lightness of whipped cream or egg whites. This version, made with whipped cream, offers a delightful creaminess that complements the coffee-soaked ladyfingers perfectly.
In this recipe, you'll learn how to create a luscious tiramisu that layers coffee-dipped Savoiardi biscuits with a smooth mascarpone custard, all topped off with a dusting of cocoa powder.
Ingredient notes
- You can substitute heavy cream with 4 egg whites, beaten to stiff peaks, for a more traditional version of tiramisu.
Tips from The Cooking Foodie’s video
- Whisk the egg yolks and sugar over a bain marie to ensure they reach the right temperature (154-158ºF or 68-70ºC) for a safe custard. This step is optional if you're comfortable using raw egg yolks.
- When dipping the ladyfingers, only soak them for 1-2 seconds to prevent them from becoming too soggy.

Ingredients
Steps
- 1
Make the coffee syrup: mix hot coffee with the liqueur, pour into a large dish and set aside to cool.
- 2
Make the filling: place egg yolks and sugar in a large heatproof bowl and set over a pot with simmering water (bain marie). Whisk constantly until the sugar is dissolved and the custard thickens, reaching a temperature of 154-158ºF (68-70ºC). Remove from heat and let cool.
- 3
Add the mascarpone and vanilla extract to the egg yolk mixture and whisk until smooth.
- 4
In a separate bowl, whip the cold heavy cream to stiff peaks. Fold 1/3 of the whipped cream into the mascarpone mixture, then fold in the remaining whipped cream. Set aside.
- 5
Assemble: dip each ladyfinger into the coffee mixture for 1-2 seconds and place in the bottom of a 9x13 inch (22X33cm) dish. Spread half of the cream over the soaked ladyfingers. Repeat with another layer of ladyfingers and spread the remaining cream on top. Cover and refrigerate for at least 6 hours.
- 6
Just before serving, dust with cocoa powder.
Heads up — we had to guess a little:
- The quantity for the brewed espresso was inferred based on the standard conversion of cups to milliliters.
