Make a big batch of espresso or strong coffee using a mocha pot.

Set a pot of water to simmer for a double boiler.

In a bowl, combine 1/2 cup of dark rum and 1.5 cups of dark coffee. Set aside to cool.

In a large bowl, add 16 ounces of room temperature mascarpone cheese.

Add 1/4 cup of dark rum to the mascarpone and whisk until smooth.

Separate 6 egg whites from the yolks, reserving the whites for another use.

Whisk 2/3 cup of sugar into the egg yolks and place over the simmering water to create a double boiler.

Whisk the egg yolk mixture until it thickens and turns light yellow, then remove from heat.

Pour the egg yolk mixture into the mascarpone and mix until combined.

Refrigerate the mascarpone mixture while you prepare the whipped cream.
