In a large bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, and 1/4 cup of pork lard. Mix until clumpy.

Using your hands, squeeze the mixture until it resembles wet sand.

Gradually add 1/2 cup of water until the dough comes together. Knead for several minutes until well mixed.

Divide the dough into 4 pieces and shape each into a ball. Cover with plastic wrap and let rest.

Slice 2 medium potatoes into cubes and place them in a pot. Cover with cold water, add a pinch of baking soda and 1 teaspoon of salt, and bring to a boil.

Once boiling, reduce to a simmer and cook for 6-8 minutes until fork tender. Drain and return to the pot over medium-low heat for 1-2 minutes to roughen the surface.
