Heat a medium pot or Dutch oven over medium heat and add 2 tablespoons of vegetable oil to coat the bottom.

Add 450g of Italian sausage and 225g of ground beef to the pot. Sear for 2-3 minutes, then flip and sear the other side until browned.

Use a potato masher to break up the meat and cook until the fat renders and the meat is browned. Remove from the pot and set aside.

Add 40ml of olive oil to the pot, then add 1 diced sweet onion. Season with salt and sauté for about 3 minutes until softened.

Add 4 cloves of finely chopped garlic and sauté for 20 seconds.

Return the meat to the pot, stir together, and add 1.5 cans of crushed tomatoes. Let simmer for 5 minutes until slightly reduced. Season with a small pinch of sugar if desired.

In a separate pot, bring salted water to a boil and add 450g of dried ziti pasta. Cook until just under al dente, about 1 minute less than package instructions.

Using a spider, transfer the pasta to the sauce, allowing some pasta water to mix in. Stir until thoroughly combined.

In a bowl, mix together 400g of grated fresh mozzarella and 113g of grated Parmesan cheese to create the cheese mix.

Spray a 9x13 baking dish with non-stick spray. Layer half of the pasta and sauce mixture in the dish, followed by half of a 425g tub of ricotta and half of the cheese mix. Repeat with the remaining pasta, ricotta, and cheese mix.

Preheat the oven to 375°F (190°C) and bake for 35 minutes until the cheese is melted and bubbling.
