Cut the beef into thin slices, ideally thinner than what you find at the store for a melt-in-your-mouth texture.

In a bowl, mix together 3 tablespoons of soy sauce, 2 tablespoons of sugar, and 1 tablespoon of sesame oil until the sugar dissolves.

In a blender, combine 1/3 cup of onion, 70g of Korean pear (peeled), 1/3 cup of water, and 1/2 tablespoon of garlic. Blend until smooth.

Add the blended mixture to the sauce and mix well. Then add 3 tablespoons of mirin (or sake), 1/2 tablespoon of oyster sauce, and black pepper to taste. Mix again.

Marinate the 300g of thinly sliced beef in the sauce for at least 30 minutes (preferably 24 hours for best flavor).

Heat oil in a pan over medium to low heat. Add the marinated beef and cook until it changes color and is about 70-80% done.

Add 50g of onion and scallions to the pan and cook until the onions are soft and the beef is fully cooked.
