    Cut the ends off the onion, peel, and slice in half. Roughly chop and set aside.

    Peel and roughly chop the garlic cloves. Set aside with the onion.

    Slice the end off the red chilli and slice into rings. Set aside with the onion and garlic.

    Slice the end off the butternut squash, cut it in half, and hollow out the seeds with a spoon.

    Peel the skin off the butternut squash and chop it into 1-inch pieces.

    Peel and chop the carrot.

    Heat some olive oil in a large saucepan and add the onion, garlic, and red chillies. Fry for about 5 minutes over medium to high heat, stirring continuously.

    Add the chopped butternut squash and carrot to the pan.

    Top the contents of the pan with boiling water until everything is just covered.
