    Season the beef chuck roast generously on both sides with salt, black pepper, oregano, cumin, chili powder, garlic powder, and onion powder. Pat the seasoning into the meat to ensure it sticks well.

    Set the seasoned meat aside to soak in the flavors while you prepare the vegetables.

    Chop the carrots, onion, and celery into large chunks.

    Heat a cast iron pan over medium-high heat and drizzle in olive oil. Once hot, add the chopped vegetables and season with salt and black pepper. Cook for about 5 minutes until they start to caramelize.
