Prepare the chuck or sirloin steak by seasoning it with salt, black pepper, onion powder, and garlic powder. Place it on a wire rack to allow airflow.

Peel and dice the white onion, then place it in a bowl.

Chop the cilantro and add it to the bowl with the onion. Toss to combine.

For the green salsa, peel the tomatillos and rinse them. Cut them in half and place them on a sheet tray.

Roughly chop half of the onion and add it to the sheet tray with the tomatillos. Crush the garlic and add it as well.

Drizzle olive oil over the vegetables on the sheet tray and season with a pinch of salt.

Char the vegetables on a flat top or pan, watching the garlic closely to prevent burning. Remove the garlic after about 2 minutes and the tomatillos and onion after about 8 minutes.

Transfer the charred vegetables to a blender along with the avocado, cilantro, lime juice, chicken bouillon powder, salt, pepper, and ice. Blend until smooth.

For the red salsa, place the Roma tomatoes on a sheet tray and roast them in the oven.
