    Start by cutting half of an onion into large strips and breaking them apart.

    Mince two cloves of garlic (or three if you prefer more garlic flavor).

    Chop the stem part of the green onions into small pieces and cut the leafy part into 2-inch sections, keeping them separate for later use.

    Rinse the bean sprouts with water and pat them dry.

    Marinate the shrimp with salt, sugar, white pepper powder, baking soda, corn starch, and rice wine. Mix well and add a touch of oil and sesame oil. Set aside for 10 to 15 minutes.

    Prepare the chow mein sauce by mixing dark soy sauce, regular soy sauce, and sugar until the sugar dissolves completely.

    Add the chow mein sauce to the pan and toss the noodles to coat evenly. Stir-fry for about another minute to enhance the flavor.

    Add some water to the noodles and cover the pan. Turn the heat to low and let the noodles absorb most of the water, keeping an eye on it.
