    Prepare the rice according to package instructions and set aside.

    Cut the zucchini into squares and then into thin strips.

    Cut the carrot into thin strips.

    Slice the shiitake mushrooms into thin strips.

    Cut the cabbage and lettuce into strips.

    Prepare the roasted seasoned seaweed and set aside.

    Boil water in a pot, season with salt, and add the bean sprouts. Cook until tender, then drain and rinse under cold water.

    In a pan over medium heat, add a little oil and stir-fry the zucchini, carrots, and shiitake mushrooms, seasoning lightly with salt until cooked but still colorful.

    In a bowl, mix together the gochujang, soy sauce, sesame oil, vinegar, garlic (if using), sugar, and sesame seeds to create the sauce.

    In a serving bowl, layer the rice at the bottom, then add the cooked vegetables, raw cabbage, lettuce, seasoned seaweed, and bean sprouts on top.
