Ingredient notes
- You can substitute ground beef with ground chicken, turkey, or venison.
- For the ground beef, 85/15 or 90/10 is recommended for optimal flavor and tenderness.
- Use either sweet, white, or yellow onion for the recipe.
Tips from Evolving Table’s video
- When sautéing the ground beef, cook it for 5-6 minutes until browned, but it doesn't need to be fully cooked through at this stage.
- To avoid the dreaded burnt error, do not stir the crushed tomatoes and kidney beans after adding them to the pot before pressure cooking.
- Make sure the pressure release valve is sealed before cooking on high pressure for 20 minutes.

Ingredients
Steps
- 1
Set the Instant Pot to the sauté function and add the oil.
- 2
Add the ground beef and cook for 5-6 minutes until browned, not fully cooked.
- 3
Add the diced onion, jalapeno or serrano peppers, and minced garlic. Sauté for 2-3 minutes until the onion is tender.
- 4
Pour in the beef broth and scrape the bottom of the pot to release any stuck bits.
- 5
Add the tomato paste, Worcestershire sauce, and brown sugar to the pot.
- 6
In a small bowl, mix together the chili seasoning: combine chili powder, cumin, paprika, garlic powder, oregano, cayenne pepper, cinnamon, black pepper, and salt. Measure out 4 tablespoons and add to the pot, saving the rest for later.
- 7
Add additional salt and cayenne pepper to taste, then mix well.
- 8
Pour in the crushed tomatoes and kidney beans, but do not stir.
- 9
Close the lid, ensure the pressure release valve is sealed, and set to high pressure for 20 minutes.
- 10
After cooking, quick release the pressure and open the lid once the float valve drops.
- 11
Stir the chili well before serving.
