About this recipe

This High Protein Chicken Alfredo is a creamy, delicious dish that's perfect for meal prep or a quick dinner. Packed with flavor and high in protein, it doesn't compromise on taste or your macros!

In just 30 minutes, you can whip up a satisfying meal that serves six, making it ideal for families or weekly meal planning.

Ingredient notes

  • You can use chicken breast or tenders; tenders are recommended for easier cooking and juiciness.
  • Mushrooms are optional; feel free to omit them or add your preferred vegetables.
  • For the sauce, you can adjust the ratio of cottage cheese and Greek yogurt as long as the total is about 500g.

Tips from Noel Deyzel's video

  • Cut chicken into even 1-inch cubes for uniform cooking.
  • To avoid tears while chopping onions, keep the root intact until the end, as demonstrated by Gordon Ramsay.
  • Do not simmer the sauce after adding it to the chicken to prevent curdling from the lemon juice.

Ingredients

Steps

  1. 1

Cut the chicken breast or tenders into 1-inch cubes, keeping them as even as possible for even cooking.

  2. 2

Season the chicken with Italian seasoning, salt, and pepper. Add about 1 teaspoon of minced garlic and a tablespoon of lemon juice. Mix well and set aside.

  3. 3

Peel and chop the onion, keeping the root intact to avoid tears. Cut the onion into small minced cubes.

  4. 4

If using, chop the mushrooms and set them aside with the onions.

  5. 5

In a blender, combine 300g of cottage cheese, 200g of Greek yogurt, and 50g of Parmesan cheese. Add about 100ml of milk and blend until smooth. Set the sauce aside.

  6. 6

Heat a pan and spray it with olive oil. Cook the chicken over medium to medium-high heat until almost done.

  7. 7

While the chicken is cooking, start boiling water for the pasta and cook it according to package instructions.

  8. 8

Once the chicken is nearly cooked, add 150ml of chicken broth to the pan.

  9. 9

After the chicken is fully cooked, turn off the heat and wait about 1 minute before adding the sauce. Do not simmer the sauce to prevent curdling due to the lemon juice.

  10. 10

Mix in the cooked pasta with the chicken and sauce until well combined. Plate the dish and garnish with chopped parsley if desired.

  • Estimated amount of Italian seasoning based on typical usage.
  • Estimated amount of lemon juice based on typical usage.
