    In a large bowl, combine the dry ingredients: 2 and 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of cream of tartar, 1 teaspoon of ground cinnamon, and 3/4 teaspoon of salt. Whisk together until well mixed.

    In another bowl, cream together 1 cup (226 g) of unsalted room temperature butter and 1 cup (200 g) of granulated sugar using a stand mixer or hand mixer on medium speed for about 3 minutes until light and fluffy. Scrape down the bowl as needed.

    Add 2 large eggs one at a time, mixing well after each addition. Then add 2 teaspoons of vanilla extract and mix until combined.

    Gradually add the dry ingredients to the wet mixture on low speed, mixing until just combined. Finish mixing by hand to avoid overmixing.

    In a small bowl, mix together 1/3 cup of granulated sugar and 1.5 teaspoons of ground cinnamon for rolling the cookies.
