    Trim, peel, and slice one red onion in half, then make thin slices across.

    Slice one red bell pepper (capsicum) into thin slices or dice it as preferred.

    Remove the tops from two carrots and slice them into thin rounds (peeling is optional).

    Grate three cloves of garlic and one teaspoon of peeled ginger on a microplane to create a paste.

    Chop the white root of three spring onions and thinly slice the green stems for garnish.

    In a bowl, mix together 2 1/2 tablespoons of low sodium soy sauce, 1 tablespoon of rice wine vinegar, 2 teaspoons of sesame oil, 1 1/2 tablespoons of honey, 1 teaspoon of Sriracha or chili flakes, and a little ground white pepper to create the glaze.

    In a separate bowl, add 1 kg of boneless, skinless chicken thighs, 2 teaspoons of cornflour, and a touch of salt and ground white pepper. Mix until the chicken is coated.

    In a saucepan, combine 1 1/2 cups of washed jasmine rice, 550 ml of cold water, and a small pinch of salt. Bring to a boil, then cover and reduce heat to low, cooking for 12 minutes undisturbed.

    In a large pan over medium-high heat, add 1 tablespoon of neutral oil. Add the sliced onions, bell peppers, carrots, and a little salt. Sauté for 8-10 minutes until the vegetables are slightly caramelized and al dente.

    Add the chopped white part of the spring onions to the pan and cook for an additional minute. Remove the vegetables from the pan and set aside.

    Let the rice sit off the heat for 4 minutes with the lid on, then fluff with a fork or spatula.

    In the same pan used for the vegetables, add a little more oil and heat. Add the chicken and cook for about 10 minutes, flipping occasionally until golden brown.

    Add the glaze to the chicken, scraping the bowl to get all the flavor. Cook for 2-3 minutes until the glaze thickens and coats the chicken.

    Remove the chicken from the pan and set aside. Cook the remaining glaze for 1 minute until sticky.

    Slice or dice the chicken as desired. Serve by placing rice on one side, stir-fried veggies on the other, and chicken in the middle. Drizzle with remaining glaze and garnish with spring onion and optional sesame seeds.
