Set up a dredging station with three shallow bowls: in the first, crack 2 eggs and season with a pinch of salt and pepper; in the second, combine 40g of all-purpose flour, 1 teaspoon of salt, and 1/2 teaspoon of pepper; in the third, mix 1/2 cup of shredded Parmesan, 1/2 cup of Italian breadcrumbs, 120g of panko breadcrumbs, and the chopped parsley.
