Preheat the oven to 325°F (163°C).

Cut the vanilla bean in half and scrape out the seeds.

In a medium pot, combine 720 ml of heavy cream and the vanilla bean seeds along with the pod.

Heat the cream mixture over medium heat until it scalds, then remove from heat and let it infuse for 15 minutes.

Separate 5 egg yolks into a bowl and add 0.5 cup of sugar and 1/8 tsp of salt. Whisk until combined.

After 15 minutes, strain the cream mixture through a sieve to remove the vanilla pod and any large pieces.

Slowly pour the warm cream into the egg mixture while stirring to prevent cooking the eggs.

Prepare 6 ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches about a third of the way up the sides of the ramekins.

Pour the custard mixture into the ramekins, filling them just below the lip.

Bake in the preheated oven for 30 to 40 minutes until set but still slightly wobbly in the center.

Remove the ramekins from the water bath and let them cool, then refrigerate until chilled.
