The recipe features a simple broth made with hot water, shoyu (Japanese soy sauce), chicken stock powder, ginger, and lard, which adds a rich flavor. Plus, the quick ajitama egg adds a nice touch without the long soaking time usually required.
Ingredient notes
- Use Japanese soy sauce for the best flavor, but Chinese soy sauce can work in a pinch.
- You can substitute lard with chicken fat if you prefer.
Tips from Way of Ramen’s video

- Strain the noodles well after cooking to avoid diluting the soup with excess water.

Ingredients
Steps
- 1
Poke a hole into an egg and lower it into a pot of boiling water. Cook for about 6 to 7 minutes.
- 2
Cool the egg down in an ice bath and peel it when it's cool.
- 3
In a small pan, add 1 tablespoon of shoyu, 1 tablespoon of sake, and 1 teaspoon of sugar. Mix to combine over low heat.
- 4
When tiny bubbles start to form, add the peeled egg into the tare and roll it around in the sauce for about 4 to 5 minutes.
- 5
Get two pots of water boiling on the stove: one for the noodles and one for the soup.
- 6
While the water is boiling, slice up some green onions and grate a small knob of ginger.
- 7
In a bowl, add 1 tablespoon of shoyu, 1 teaspoon of chicken stock powder, sliced green onions, grated ginger, and 1 teaspoon of lard.
- 8
When the water is boiling, cook the ramen noodles according to the instructions.
- 9
When the noodles are almost done, add 300 ml of hot water into the bowl and stir everything together before adding the noodles.
- 10
Strain the noodles to remove excess water and add them to the bowl.
- 11
Top with ajitama, green onions, and nori as desired.
Heads up — we had to guess a little:
- The amount of ginger is inferred as a small knob based on typical usage in ramen.
