Feed your sourdough starter with 0.25 cup of filtered water and 0.5 cup of whole wheat flour. Let it sit overnight until bubbly.

In a large bowl, combine 120g of sourdough starter with 310ml of warm water (90°F). Stir until mostly combined.

Add 500g of bread flour and 2 teaspoons of fine sea salt to the bowl. Mix until a shaggy dough forms, ensuring not to fully combine.

Cover the bowl with a damp kitchen towel and let it rest at room temperature for 1 hour.

After 1 hour, wet your fingers and perform four folds on the dough, turning the bowl 90 degrees after each fold. Cover and let it rest for 20 minutes.

Repeat the stretch and fold process every 20 minutes for a total of 2-4 times, depending on your preference for chewiness.
